Ingredients:
3 bunches brocolli, coarsly chopped
0.5 large onion, chopped
1 tablespoons ghee
1 tsp turmeric
1 tsp coriander
1 tsp red chilli powder
2 tsp salt
1 can coconut milk
1 medium tomato
1 cup chicken broth
1/2 cup sliced mushrooms optional
parsley to garnish optional

Its all organic and cooks fast. My improvisation of my Danish host mother's recipe, so its a mix of Pakistani and Danish cultures. The spices in the soup have therapeutic benefits. Turmeric in particular is good for your joints. Make it in winter with lots of love, its a good medium rich soup that will warm your insides!Directions:
In a large pot, melt the ghee. Add onion and spices. Add broccoli, coconut milk, tomato, and chicken broth; cook until broccoli is almost tender. Stirring occasionally with a wooden spoon. Remove from heat. If you prefer, you can puree the soup in a blender, in small batches. Saute mushrooms in a little oil. Use this and parsley to garnish the soup and serve.

Mung Beans Soup

Spice Mix:2tbl Cumin
2tbl Corriander
!tbl Tumeric
!tbl Salt
1tbl Ginger
3 Bay leaves
3tbls sesame oil or Ghee

What makes is special?? Em... I will get back to that.
That's how I do it! Very simple and easy.
- Soak 3 cups of Mung beans overnight.
- Pressure cook 3 cups of mung beans with 12 cups of water
- Let then steam.
- simmer on low for 25 mins
- turn off the pressuer cooker
- Let them sit until depressurized or run cold water over the sealed cooker to cause decompression and allow opening.
Simmer spices on low for 1 - 2 mins and then turn off.
Add spices to the cooked mung beans.Add 1 - 2 tbls of lemon juice
And You'r done!
