Spinach, Beet tang

Ingredients: 
6 bunches of spinach (if they are very small make it 8), 8 Beets (if you can find a botttle of saukrout and beets where you live...use that is incredible), 1 cup unsweetened shredded coconut, 2 Limes,Salt,Olive oil
What makes this recipe special?: 

Add a raw salad such as this one along with your meal and enjoy the uplifting benefits of living food, vibrant with minerals and nutrients.
Directions: 

Wash the spinach very well and dry in a lettuce dryer

Prepare the beets:   wash them and cut of the greens

Peel the beets and shred them either in a food processor or with a hand grater.

Combine the spinach and the beets in  large salad type bowl

Sprinkle about 1 cup of shredded cocnut (the unsweetened kind) into the spinach mix

Squeze two limes into the mix (leave out limes if you are using the saukrout with beets blend)

Salt to taste

Add a teaspoon of Olive oil

Toss it gently taking care notto bruise the delicte spinach leaves.
